The winemaking philosophy is very simple: intervene as little as possible (both in the vineyard and the winery) and let nature take its course.  Pop Sec which is produced from the L’Echalier vineyard and sees extended lees ageing is without doubt one of the most consistently delicious sparkling Pét Nats we’ve ever tasted. All-star Chenin and not to be missed.



The Les Quatre philosophy is to make the best wines possible with a style they like to call ‘Paris Wine Bar’. We take that to mean totally drinkable, accessible and fun, all whilst being brilliantly made. All the fruit they work with is from vineyards that are either certified or follow biodynamic principles. This is a blend of Mauzac and Sémillon, made with grapes from Gaillac.

 

Domaine Dame Jeanne was founded in 2017, just after Jeanne finished school. Jeanne’s parents run a Champagne House in the Aube – Champagne Piollot. Much like her parents, Jeanne and her partner Gennaro follow natural farming principles.
This Crémant de Bourgogne is pure Pinot Noir, from La Grand Côte. Fermented in stainless steel and then aged for two years on the lees. Disgorged in September 2020.

A slightly sparkling white wine, natural, unfiltered and refermented in the bottle. Pure Glera grapes from Resera, in the historic hills of Proseccco, at 370 meters above sea level. 25 year old vines on moraine soil. Thanks to the Col fondo method the yeasts form a deposit on the bottom of the bottle (fondo literally means bottom in Italian) allowing the wine to maintain itself for longer and giving a complex flavour, with savoury bread notes and hints of apple.



Col Tamarie is an organic sparkling wine made on San Lorenzo hills by a very talented duo, Marta & Alberto, who describe their wine as ‘Mountain Prosecco’. It is a blend of six grape varieties, including Bianchetta, Grapariol and the more familiar Glera. The wine spends a small amount of time on skins, never has any sulphites added and rests for a minimum of 10 months before being available. This may originate from Prosecco territory, but it is so much more than that.

 

The Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 18-24 months to give depth and some biscuity aromas which only bottle-fermentation can deliver.
