The New England Mixed Case

The Pinot Noir, Bacchus and Pinot Gris grapes are carbonically macerated for 10 days, giving the wine bright strawberry and cherry notes. They are then pressed in a traditional basket press and fermented in separate vessels (with the addition of a Pied de Cuve culture started in the vineyard 10 days before). The wine is blended before bottling in the Spring as the weather warms up and some of its reserved juice is added; unfined, unfiltered and no additional sulphur.



The Pinot Noir and Pinot Gris grapes were de-stemmed, crushed and fermented together (with the addition of a Pied de Cuve culture started in the vineyard 10 days before). The ferment was treated very gently throughout and not plunged or pumped over, and was pressed out in a traditional basket press when alcoholic fermentation had finished.  Some of its reserved juice was blended back into the wine prior to bottling. The wine was bottled without being fined or filtered and no sulphur added.

The Ancestral Red is dry and fizzy. Matt commented "it is an English Autumnal country walk (hips, haws, sloes) in a glass, it would have made a cracking still wine in retrospect but that is the beauty of hindsight". Amazing with Mortadella or hams.

 

The Field Blend is a light red blend of everything that grows at Walton Brook. 2021 was a tricky vintage for still wines so far North but Matt made a wine that is such a great wine bar wine. It is currently very popular in kegs for our wine on tap program.

 

A triumph in such a tricky vintage to produce a still wine of this quality in England.
20% whole bunch, 40% of destemmed whole berries and 40% pressed grapes layered in tank (mille-feuille) macerated for seven days. Gently pressed to extract juice and transferred to amphora and barrel to continue fermentation with indigenous yeast and aged for 6 months.


Westwell's first Pink Pet Nat made from Chardonnay, Pinot Meunier & Pinot Noir grapes. Macerated on skins for a long weekend, partially fermented in stainless steel with indigenous yeasts.

 

The Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages plus base wine from 2018 to give further complexity and a consistent style. The wines are lees-aged in bottle for a minimum of 3 years to give depth and autolytic complexity which only bottle-fermentation can deliver.
