Viticulture here is very traditional, farmed by hand (the only way you can at these inclines) and irrevocably linked to mules used to work the land; they are used to plough, harvest and for loading. Hand harvested grapes (varieties kept separate) spend one day macerating on the skins and then undergo spontaneous fermentation in old barrels.
