Viticoltori De Conciliis

Viticoltori De Conciliis Pulcinella Extra Virgin Olive Oil

Country: Italy
Size: 3L
Vintage: 2019

Located in Cilento on the Campanian coast Viticoltori De Conciliis was founded in the 60s by Alessandro De Conciliis, with olive trees, vines and figs, currently they have around 15 hectares of vineyards and about twenty olive groves.
They are masters of Aglianico. Our connection is through our friend Jack Lewens from Leroy restaurant who makes his Vigneti Tardis wines with Bruno De Conciliis . This oil was imported for Pastaio restaurant, as they are temporarily closed we are offering it for home consumption.

Paola De Conciliis runs the viticulture and olive oil production at the family vineyard. Paola works without the use of pesticides and chemical fertilizers, applying only  herbal and natural remedies. The olive trees are very ancient, some are more than 300 years old. Varieties are local ones such as Salella, Rotondella and Ogliarola. The olives are processed in an oil mill local to the farm which extracts the oil in gentle manner meaning the oils retain their fruity and spicy notes.

The olives are harvested at a higher level of maturity than the the pungent green Primavera oil. The result is an oil that is delicate though still with a peppery character and a pleasant bitterness. It is a very round oil, that is perfect for pouring on grilled fish, dressing greens and cooking too.
