Cosimo Maria Masini is in San Miniato,Tuscany. High in the hills, the area is most famous for white truffles. The farm is on a single hill, with 40 hectares of vineyards, olive trees and arable land. With biodynamics at heart, Cosimo Maria Masini are passionate about mixing the use of the land to encourage as much biodiversity as possible. The vineyards are spread over 13 hectares, at about 100masl.
Annick is a blend of 85% Sauvignon Blanc, and 15% Vermentino, each variety being fermented separately. The Sauvignon Blanc was pressed immediately, and fermented in stainless steel with indigenous yeast. The Vermentino was skin macerated for 4 days and then fermented in cement. After each fermentation had finished the wine was blended and left in steel for 4 months.
