Nicolas and his wife Karine farm 25 hectares of vines in Corbières, not far from the Mediterranean sea in the South of France. The estate previously sold off their grapes to local negociants, but when Nicolas and Karine took over his family Domaine in 2000, they beginning a painstaking conversion to organic and biodynamic viticulture, aiming to make the kind of wines they enjoyed drinking themselves.  Karine Mirouze created the "ouze" line of wines as a way of making, fun easy to drink "vins de soif" from their biodynamic farm in the south of France.     

Nicolas and Karine are passionate about farming with the utmost respect for nature, having spent the last 20 years converting their vines to organic viticulture and then to biodynamics in 2018. Cover crops are used over winter, and sheep graze between the vines in summer. The vineyards face north on the Massif de Fontfroide, and vines are planted on decomposed sandstone. Fermentations are spontaneous with natural yeasts, and wines are vinified without additions.

The fruit for Rouze comes from a 1ha plot of 15-year-old vines. Fermentations are spontaneous with natural yeasts, and wines are vinified without additions. Rouze is bottled unfined and unfiltered and with <10mg sulphur. Light and refreshing and perfectly served slightly chilled.
