Cosimo Maria Masini is in San Miniato,Tuscany. High in the hills, the area is most famous for white truffles. The farm is on a single hill, with 40 hectares of vineyards, olive trees and arable land. With biodynamics at heart, Cosimo Maria Masini are passionate about mixing the use of the land to encourage as much biodiversity as possible. The vineyards are spread over 13 hectares, at about 100masl.
Each variety is fermented on skins in cement tanks, indigenously, for about 20 days. The wine is then moved to 50hl old oak tanks, called Troncoconici, where malolactic fermentation takes place. After racking the wine is left for 6 months elevage.
