Our good friend Marc Isart (of Maldicion, and founding member of Commando G alongside Dani Landi and Fernando Garcia) with his good friend Miquel Santiago Carrillo, are the two Salvajes or 'savages' of Gredos. It's a perfect partnership; Miquel owns and farms arguably the best vineyards in Gredos and Marc is, of course, a exceptional winemaker.
The wines are categorised like the Burgundian model with regional 'Marino' wines forming the broad base of the pyramid, village wines of Cadalso and San Martin above, and at very apex are the single vineyard selections. This is such an exciting project and one which Uncharted is delighted to be a part of right from the start.
The amazing vineyards are high up (800+m) in the middle of the Gredos mountains. The soils are decomposed granite so the goblet trained vines really have to establish deep roots to secure the minerals and nutrients they need. Miguel farms along biodynamic principles, ploughing with horses and leaving wild grasses amongst the vines to help balance the humidity. This is hot, harsh country and harvest is early in mid August before the heavy autumn rains.
La Sierra is a single plot at 900m altitude in the Cadalso municipality surrounded by chesnut, oak and fir trees. The vines are 90 years old. Spontaneous fermentation in stainless steel without destemming followed by an 80 day maceration. Aged for 12 months in 500L used barrels.
