Artomana Txakolina was founded in 1988 with 6 hectares; it has now grown to 20 hectares and is the largest producer in the region Arabako Txakolina-Txakoli de Alava. The winery work as sustainably as possible and are practising organic.
After a short cold maceration, each variety ferments separately in stainless steel, with native yeasts. The wine then ages on the lees for two months, before being blended and bottled. Per the style in Álava, Xarmant is bottled with less naturally occurring residual carbon dioxide than txakoli from other regions.
