Mario Rovira makes his Akilia wines in Bierzo country, Northwest Spain but for the Tosca he has teamed up with Bodegas Delgado Zuleta in Jerez. Tosca is a successful experiment for Mario and is gaining a cult-like status world-wide. We are delighted to work with him on this, his first wine in keg project.
Mario organically farms old-vine Palomino Fino grapes grown on the distinctive white albariza soils of the area. Unlike his fellow wine-makers in Jerez, he doesn't fortify the wine for sherry, but instead he allows the unfortified wine to develop in stainless steel tanks under a layer of flor. The wine is aged for a further 7 months in old Jerez casks. This style of wine is rare, yet utterly delicious.
