Fabien Jouves founded his winery, Mas del Perie, in 2006 and has farmed his 21 hectares in the hills of Cahors and Quercy biodynamically since 2011. He doesn't care whether his wines achieve Cahors AOC status as he prefers to declassify and be free to experiment with grape varieties, blends and ageing techniques.
70% from old Colombard vines and 30% from younger Chenin Blanc, planted on the limestone outcrops of Quercy and Gascony, giving this wine a marked minerality. The Jour Fleur is named after the day of the moon calendar on which it was kegged. Direct press, and natural fermentation with ageing in both concrete and stainless steel tanks.
