Riccardo Zanotto is the man behind this label, he makes predominantly 'Col Fondo', sparkling wines  (fermented in the bottle on lees). All grapes are farmed organically and/or biodynamically, and with the help of trusted growers and oenologists, Riccardo's interpretation of wine is translated directly into the glass.

"Whoever drinks one of my bottles should find in it the stories of the past, the scent that made me fall in love with it and that peculiar personality that distinguishes me, because it's witness of a particular territory."

A slightly sparkling red wine, natural, unfiltered and refermented in the bottle. A rich blend of red grapes gown organically in the in the historic hills of Prosecco.

After a day of maceration on the skins, the must is decanted in cold containers to block the fermentation. The wine is then bottled near Easter time, according to the moon calendar, during the crescent moon, without added sugar or sulphites, to let it re-ferment in the bottle naturally.

Thanks to the Col fondo method the yeasts form a deposit on the bottom of the bottle (fondo literally means bottom in Italian) allowing the wine to maintain itself for longer and giving a complex flavour, with savoury bread notes and hints of apple. The wine reaches its maturation around September, when the wine is released.
