We are delighted to be able to offer this project between Sylvain Pataille and Deja Bu Wines. Pataille is a winemaking tour de force; not only does he farm and make wine from his own 17ha around Marsannay but he also buys in grapes to make more cuvees, such as this one, and works as a consultant oenologist for multiple winegrowers. As he wasn't from a winemaking family, he worked hard to acquire land in Burgundy starting off with just 1ha in 1999. He now farms his 17ha biodynamically. Pataille has been one of the leading proponents in the renaissance of Aligote. He is one of five founding members of the Les Aligoteurs, an association dedicated to showcasing the finest expression of the grape.
This is the fourth edition of this wine which is a blend of negoce grapes from three distinct plots in Burgundy vinified by Sylvain Pataille. 50% of the blend comes from Bissey-sous-Cruchaud, Southern Burgundy, and is fermented in fiberglass. 40% is from Marsannay and spends 18 months in a new 60-hL oak foudre. The final 10% does not undergo malolactic fermentation adding vibrancy and freshness. Once blended the wine is left for three months before kegging with a light filtration and minimal sulphur.
