Cosimo Maria Masini is in San Miniato,Tuscany. High in the hills, the area is most famous for white truffles. The farm is on a single hill, with 40 hectares of vineyards, olive trees and arable land. With biodynamics at heart, Cosimo Maria Masini are passionate about mixing the use of the land to encourage as much biodiversity as possible. The vineyards are spread over 13 hectares, at about 100masl.
Biodynamically farmed grapes are manually harvested and de-stemmed. Fermentation is with indigenous yeasts in concrete tanks for three weeks and no SO2 additions. Then racked off and racked a few more times over winter with bottling in early Spring.
